University of Rhode Island food scientists Dr. Arthur G. Rand (left), and James H. Hourigan with a sample of Miona, a yogurt-type product made from lactose-free milk. They have developed an inexpensive procedure to change the lactose in milk to two more easily digested substances. More than half the world's adult population is unable to drink milk or enjoy milk products because of a lactose intolerance reaction.
