At an open-air Paris market, Richard Grausman, the U.S. representative of the Cordon Bleu cooking school, picks vegetables with the school's director, Elizabeth Brassart (right). Taking cooking courses while on holiday is the latest vacation fashion. - The latest travel question is not that perennial query, "Where shall we go?" but "What's cooking?" Besides the people who pack racquets and tennis togs, there is a new breed. They pack spatulas and aprons. They don't consult the brochures to find out who is the golf or tennis pro; they want to know who is the visiting professor of culinary arts.
