Emil Hilbert, Icing artist. The keenest brains in America are still trying to find out something that looks simple; what makes your bread become stale. "We've been trying for 10 years," said Howard O. Hunter of Chicago, president of he American Institute of Baking, which is devoted to research and education. 'We've had some of the top scientific men trying to solve the problem, but we haven't got all the answers yet. One answer is too much heat. Another answer is too much humidity. Or too little. But there's a lot more to be done."
