If sweet corn could be delivered to your home like this, as demonstrated by Cathy Gregorich, with ice frozen around the ripened ears, you would have the ultimate in sweet roasting ears, says the University of Illinois Department of Agriculture. Prof. Ross Kelly of the University says sweet corn loses much of its sugar content a few hours after it is picked, unless it is iced immediately.
